Chocolate hazelnuts Babka


This homemade Babka is a brioche (french bun) simply filled with chocolate and hazelnuts. It’s a simple chocolate hazelnuts Babka, fun to do in family recipe and with a very few ingredients. Great to be enjoy for breakfast or “le goûter” (mid afternoon sweet snack)!


Ustensils & tools

In addition to the usual pastry and baking ustensils:

  • Ideally un food processor

Ingredients (x parts)

Brioche dough

  • 510g T55 flour
  • 150g butter at room temperature (a little soft)
  • 300g Egg (about 6)
  • 120g Sugar
  • 30g Milk
  • 30g Rum
  • 30g Fresh baker’s yeast or 20g dehydrated yeast
  • 9g Salt


Even if this recipe is simple, it requires a bit of organization in order to respect the resting times. As the brioche dough have to rest in a cool place for at least 6 hours and preferably overnight, don’t hesitate to prepare it the night before.
